Chickens have a great ability to keep their heads stable. Our bodies use a gyro-like mechanism in our ears which has 3 mutually orthogonal inertial measurement devices. Modern motion processors use something called an Inertial Measurment Unit (IMU). These devices provide movement data which can be used to compensate for the movement. Chickens apparently have the same type mechanism only with a higher update rate.

I remember when my great grandfather would hypnotize the chickens. Chickens can only focus on one thing at a time so if you draw a line in front of them they will follow the line and stare at it for up to a minute.
He used to draw a circle around them and they'd stay in it for up to a minute or two before they wandered out of it.

I observed this with my own chickens. They make great pets (but not the roosters though)! One of my chickens would wait in an outside window-sill to be let in. It wanted to lay it's egg in a cage in the house...and then go back outside! It loved to be picked up and stroked. A lady in a Beverly Hills mansion had a pet chicken she let run freely though the house...in diapers! But just because they can keep their heads straight...doesn't keep them from getting their heads chopped-off!
